KETO Chocolate Peanut Butter (no-Oat) No-Bake Cookies

Chocolate Peanut Butter Oat No-Bake Cookies, done Keto Style!!

These were my FAVORITE treat growing up and it was always so fun to make them with my mom. My brother and I would eat as many as we could get away with in one sitting.

I’ve tried many times to create a keto-friendly version of this cookie and I think I’ve finally done it. A few of my earlier version required refrigeration but I wanted a cookie that could sit out on the counter in a container and maintain its shape/texture, just like those Southern originals. Let me know how you like it if you try them!!

Measure everything first and have ready to go.

In a pot, mix:
1/4 cup granular Swerve
1/4 cup unsweetened cocoa
1/2 cup butter
1/2 cup unsweetened almond milk

Blend fully and bring to a rolling boil. Stirring occasionally, boil for 60 seconds (set a timer!!)

Remove from heat and mix in:
1/2 cup creamy peanut butter
1.5 tsp vanilla extract

Once smooth, add in:
3 cups unsweetened coconut flakes
1/2 cup sliced almonds, crushed further

Fully coat. Blob out onto parchment. Let cool.
