EASY Keto Brussels Sprouts Casserole

Need a quick & easy option for dinner?  Maybe you’ve signed up for a pot luck and have no time?  Maybe you’re looking for the perfect dish to bring to your next gathering.  Look no further.  This Keto Brussels Sprouts Casserole is SO EASY – just 5 ingredients! I adapted it from a recipe in the The Complete Ketogenic Diet for Beginners cookbook. It is UNREAL GOOD!!! I’ve made it for multiple group gatherings and it gets cleaned out, every time. Keto Brussels Sprouts Casserole

– 1 lb brussels sprouts
– bacon, 8-10 slices cooked and chopped
– 1/2 sweet onion, diced and pan-cooked in a bit of olive oil
– 1 cup shredded mozzarella cheese
– 3/4 cup heavy cream

• Use some of the bacon grease to grease a 9×11 casserole dish
•Halve or quarter the brussels sprouts then blanch them for 10 mins (boil a pot of water then throw them in. Cook then drain water) This just pre-cooks and softens them.
• Mix the brussels, bacon, onions, and 2/3 of the cheese in a bowl. Spread mixture evenly in dish.
• Pour the heavy cream over evenly. Top with rest of cheese.
• Bake 20 mins or soon 350. Top cheese will brown slightly, then it’s ready.

• Buy double the ingredients, you’ll want to make more. 😍
