Two EASY ways to make Low Carb Ice Cream!

Tried and true from an ice cream snob and it is amazing! Better than Halo Top or any of the other commercially available low carb options!

Mason Jar Ice Cream

Recipe:
1 cup heavy whipping cream
1 1/2 tbsp stevia
1 tsp vanilla extract
1 tbsp cocoa powder
Shake aggressively in a mason jar and freeze for 2 hours.  Best when eaten same day – if you leave overnight it gets a bit hardened and you need to let it sit out to come back to a good consistency.36472509_253457625208740_6894628974983380992_n

And my FAVORITE every day easiest-ever option:   Slightly Frozen Whipped Cream!

I make my whipped cream with 1/2 cup heavy whipping cream and 1 tsp vanilla extract.  Mix together with a hand mixer (or whisk, if you’re looking for an arm workout) until you see stiff peaks.  Freeze for 30 minutes to stiffen up a bit.
This one is topped with sliced almonds, dark chocolate drops, and a mix of chia, flax and hemp seeds but you can top with any of your favorites!
