Who else misses a bagel run as much as I do??!?
Well look no further… I very slightly modified a fathead dough recipe I came across at some point and turned it into keto bagels with a few toppings. Easy and delicious, and while the texture is not quite the same as a regular carb-loaded bagel, it freaking does the trick!

Keto bagels!
I very slightly adapted a generic fathead dough recipe:
1.5 cups shredded mozzarella
2 oz cream cheese
1 eggs
1.5 cups almond flour
1 tbsp baking powder
1 tsp garlic powder (optional)
2 tbsp hemp seed
1/2 tbsp ground flax
Preheat oven to 400.
Melt the cheeses in microwave for 1 minute. Stir, microwave 30 more seconds. Stir again. Mix in egg extremely well until smooth.
Combine dry ingredients and slowly mix into cheese mixture until a dough is created. Put in freezer for 5 mins.
Line baking sheet with parchment. Break dough into 6 equal parts. Roll each one with your hands into a “snake” and press into a circle shape. Top with your favorites. Bake for 12-14 mins.
Let cool 5-10mins. Best when cut then toasted.
Pre-bake topping ideas: Trader Joe’s Everything but the Bagel Seasoning, poppy seeds, salt (brush with melted butter or eggwash before sprinkling)
Dough mix ins: dried rosemary, smashed blueberries, sundried tomatoes, anything!
